Sausages with Smothered Peppers, Onions, and Tomatoes ~ Italian dinner

What to do with bell peppers, an onion, tomatoes, and sausages in your kitchen? You have the ingredients for a divine Italian dinner that does not take long to cook. The tomatoes simmer and sweeten on the stove top, coating the colorful bell peppers, onion, and golden sausages. Serve with buttered pasta, white rice, or garlic bread. Warning: This dish tends to be devoured fast.

Ideal for a weeknight dinner.

For two to three

Ingredients:

  • 3 bell peppers (red, yellow, green), cut into thin strips
  • 1/2 sweet onion (my preference), cut into medium pieces
  • Two cooked sausages, sliced into medallions (my preference is a combination of pork and beef)
  • 14-ounce can of San Marzano tomatoes with juice, or fresh tomatoes peeled and cut up
  • 2 to 3 tablespoons of olive oil
  • salt and black pepper

Directions:

  1. Brown the sausages in a skillet with oil on medium-low heat for about 5 minutes on each side until golden in color. Set the sausages to the side.
  2. To the same skillet, add the onion and peppers. Cook until the onion becomes translucent and the peppers soften. Season with salt and black pepper.
  3. Introduce the tomatoes to the skillet with the sausages. Coat the peppers and sausages well with the tomatoes. Cover the skillet and simmer for 20 minutes. 
  4. Check for additional seasoning. Serve on a platter and eat with pasta, rice, or garlic bread.
